Cupcake Batter Calculator

About 6 cups of cake batter makes 24 to 30 standard cupcakes, with each well filled about four fifths full, according to King Arthur Baking. That is 4 to 5 cupcakes per cup of batter. Jumbo pans make about half as many, and mini pans slightly more than twice as many.

A recipe for one 9 x 13 inch cake or two 9 inch round layers makes about 6 cups.

    How the calculator works

The calculator scales one measured result. King Arthur Baking found that its Classic Birthday Cake recipe makes about 6 cups of batter, and that 6 cups yields between 24 and 30 standard cupcakes, depending on how full you fill the wells.

Divide both ends by 6 and you get 4 to 5 cupcakes for every cup of batter:

    fewest cupcakes = cups of batter / 6 x 24

    most cupcakes = cups of batter / 6 x 30

The result is rounded down to whole cupcakes, since two thirds of a cupcake is not much use to anyone.

For the other pan sizes, the source gives two adjustments:

    • Jumbo: about half as many as standard.
    • Mini: slightly more than twice as many as standard.

The calculator multiplies by 0.5 for jumbo and by 2 for mini. For minis, read the figure as a minimum and expect a few extra.

    Worked example

Your cake recipe makes 4 cups of batter, and you want standard cupcakes.

    1. Fewest: 4 / 6 x 24 = 16 cupcakes.
    2. Most: 4 / 6 x 30 = 20 cupcakes.
    3. So line 16 wells, and have 4 more liners ready.

    The same 4 cups in a jumbo pan: 16 x 0.5 = 8, up to 20 x 0.5 = 10. In a mini pan: at least 16 x 2 = 32, and probably a few more.

Working backward is just as useful. If you need 36 standard cupcakes for a class, 36 / 30 x 6 = 7.2 cups of batter at the least, and 36 / 24 x 6 = 9 cups to be safe. A recipe that makes 6 cups will not cover it. One and a half times the recipe will.

If you do not know how much batter you have

Most people do not measure batter by the cup, so the source also gives yields by the pans a recipe is written for:

    • One 9 x 13 inch cake, two 9 inch round layers or three 8 inch round layers: about 24 standard cupcakes.
    • One 8 inch square cake or one 9 inch round layer: about 12 standard cupcakes.

Check the top of your cake recipe for the pan it calls for, find it in the chart above, and you have your number without measuring anything. Enter 6 cups for the first group or 3 cups for the second, and the calculator will match the chart.

How full to fill the wells

King Arthur Baking’s advice is to fill each well about four fifths full, and it applies to standard, jumbo and mini pans alike. That is fuller than the “two thirds” many recipes say, and it is why the range runs from 24 to 30: a generous fill makes fewer, taller cupcakes, and a scant one makes more, shorter ones.

There is one exception in the source. For a batter that does not rise much, or when you are baking at 325 °F, fill the wells almost to the top.

    Baking temperature

Most cupcakes bake between 325 °F and 375 °F, and the usual starting point is the temperature in the cake recipe.

Temperature also shapes the top. In the source’s tests, the Classic Birthday Cake baked as cupcakes at 325 °F came out with flat tops, which is what you want under a thick layer of frosting. Raising the temperature by 25 °F or 50 °F gives a domed top, and the batch baked at 375 °F rose higher than the batch at 325 °F.

    Baking time

Cupcakes bake faster than the cake they came from, and how much faster depends on the pan the recipe was written for:

    • From a recipe for 9 inch round pans: reduce the baking time by about 5 to 10 percent.
    • From a recipe for a 9 x 13 inch cake: reduce the baking time by about 40 to 50 percent.

So a layer cake that bakes for 30 minutes becomes cupcakes at about 27 to 28 minutes. A 9 x 13 cake that bakes for 40 minutes becomes cupcakes at about 20 to 24 minutes.

The source does not give fixed minutes for standard, mini or jumbo cupcakes, and this page does not make them up. Treat the reduced time as when to start checking. They are done when a toothpick comes out clean, the top springs back when you press it lightly, and the inside reads 205 °F to 210 °F.

    Tips and common mistakes

Do not fill to the brim by default. Unless the batter is a low riser, four fifths is the limit. Overfilled wells spill over the pan.

Bake one test cupcake if the recipe is new to you. It tells you how much the batter rises before you commit the whole batch.

Decide the size before you mix. A jumbo pan halves the count and a mini pan more than doubles it, so the same bowl of batter can mean 12 cupcakes or 50.

Check early. A cupcake goes from done to dry in a couple of minutes, far faster than a cake does.

Count your liners before you start. The range tells you the most you might need, and running out with batter still in the bowl is avoidable.

Keep the oven temperature in mind when you fill. If you are baking at 325 °F for flat tops, the source’s advice is to fill the wells almost to the top, which moves you toward the low end of the range.

    Frequently asked questions

How many cupcakes does a cake recipe make?

A recipe for one 9 x 13 inch cake, two 9 inch round layers or three 8 inch round layers makes about 24 standard cupcakes. A recipe for one 8 inch square cake or a single 9 inch round layer makes about 12.

How much batter goes in each cupcake?

Fill each well about four fifths full. King Arthur Baking's 6 cups of batter makes 24 to 30 standard cupcakes, which works out to roughly 3 to 4 tablespoons of batter each.

How many mini cupcakes does a recipe make?

Slightly more than twice as many as standard cupcakes. A recipe that makes 24 standard cupcakes makes a little over 48 minis. Jumbo pans go the other way and make about half as many.

Do cupcakes bake at the same temperature as cake?

Usually, yes. Most cupcakes bake between 325 °F and 375 °F, generally at the temperature the cake recipe gives. A lower temperature gives flatter tops, and raising it by 25 °F or 50 °F gives more of a dome.

How do I know when cupcakes are done?

A toothpick comes out clean and the top springs back when pressed lightly. King Arthur Baking also gives an internal temperature of 205 °F to 210 °F.
